La partidura o cracking<\/em> de la cereza no se explica \u00fanicamente porque el fruto \u201cabsorba demasiada agua\u201d. Es un proceso progresivo que combina microfisuras preexistentes, humedad superficial, ingreso de agua y debilitamiento celular.<\/p>\n\n\n\n

Durante la etapa final de crecimiento, la pulpa aumenta de volumen m\u00e1s r\u00e1pido que la cut\u00edcula. Esto genera tensi\u00f3n y peque\u00f1as fisuras microsc\u00f3picas, especialmente en la cavidad pedicelar, la sutura y el extremo pistilar. La lluvia y la alta humedad agravan estas lesiones al mantener exceso de humedad en estas zonas.<\/p>\n\n\n\n

El agua puede ingresar por dos v\u00edas, directamente desde la superficie, atravesando microfisuras de la cut\u00edcula y tambi\u00e9n desde el suelo, mediante las ra\u00edces y el sistema vascular, especialmente cuando una lluvia sucede despu\u00e9s de riegos abundantes o de cambios bruscos en la humedad del suelo.<\/p>\n\n\n\n

Una vez dentro, el agua se dirige hacia las c\u00e9lulas de la pulpa con mayor potencial osm\u00f3tico. Estas se hinchan, algunas colapsan y liberan su contenido, incluidos \u00e1cidos org\u00e1nicos que debilitan las c\u00e9lulas vecinas. El riesgo aumenta cerca de cosecha porque los frutos presentan mayor tama\u00f1o, concentraci\u00f3n de az\u00facares y tensi\u00f3n superficial. Sin embargo, no depende solamente de cu\u00e1ntos mil\u00edmetros lluevan: tambi\u00e9n influyen la duraci\u00f3n del mojamiento, humedad ambiental, estado de madurez, variedad, tama\u00f1o del fruto, carga frutal, condici\u00f3n de la cut\u00edcula y manejo previo del riego. Cargas bajas, que producen frutos m\u00e1s grandes, pueden elevar la susceptibilidad (Oregon State University Extension, 2023).<\/p>\n\n\n\n

Por eso, el manejo requiere combinar varias acciones: regulaci\u00f3n uniforme del riego, cubiertas y secado r\u00e1pido, protecci\u00f3n de la superficie, fortalecimiento de membranas y osmoprotecci\u00f3n. <\/p>\n\n\n\n

Una lluvia puede transformar una temporada de cerezas en una p\u00e9rdida comercial. El cracking ocurre cuando el ingreso de agua aumenta la tensi\u00f3n sobre la epidermis y rompe el fruto. Un incremento de apenas 2,0\u20132,5% en su volumen de agua puede desencadenar el da\u00f1o. Frente a este desaf\u00edo, Bioamerica propone una estrategia integral basada en dos tecnolog\u00edas complementarias:<\/strong><\/p>\n\n\n\n

 Acquablock\u00ae protege la superficie del fruto y la integridad de sus membranas, favoreciendo la elasticidad celular. Puede utilizarse de forma preventiva y tambi\u00e9n antes de una lluvia.<\/strong><\/p>\n\n\n\n

Fitomaat\u00ae combina glicina beta\u00edna y prolina en alta concentraci\u00f3n para apoyar el equilibrio osm\u00f3tico y la estabilidad celular frente al estr\u00e9s abi\u00f3tico. Su enfoque es preventivo. <\/strong><\/p>\n\n\n\n

Evidence<\/strong><\/p>\n\n\n\n

En experiencias desarrolladas en terreno, los resultados de I+D respaldan el enfoque, aunque la respuesta depende de la variedad y las condiciones. En Lapins, Acquablock redujo la partidura a ocho horas desde 18,4% en el testigo hasta 12,0%, y disminuy\u00f3 el \u00edndice de cracking de 14,56 a 4,8. En Sweet Aryana, Aqcuablock y Fitomaat redujeron significativamente la partidura respecto del testigo comercial. Adem\u00e1s, Acquablock alcanz\u00f3 el mayor calibre medio, con 31,58 mm y 43,1% de la fruta en categor\u00eda 4J. En Kordia, Aqcuablock y Fitomaat redujeron la partidura frente al testigo comercial.<\/p>\n\n\n\n

La recomendaci\u00f3n comienza desde color pajizo Fitomaat 100gr por cada 100L de agua o en dosis de 1kg\/ha, cada catorce d\u00edas son suficientes para ejercer un efecto osmoprotector del fruto. Ante una lluvia, la aplicaci\u00f3n debe realizarse al menos 48\u201324 horas antes del evento, en este caso la recomendaci\u00f3n es Acquablock a 300 cc\/hL o 3L\/ha. En huertos con cobertura, se recomienda priorizar Fitomaat<\/p>\n\n\n\n

El mensaje es claro: no se trata solo de crear una barrera externa, sino de preparar fisiol\u00f3gicamente al fruto para enfrentar la lluvia. Dos mecanismos, una estrategia y un mismo objetivo: reducir p\u00e9rdidas por partidura sin comprometer la calidad comercial.<\/strong><\/p>\n\n\n\n
